Sophie 

Hey, I am Sophie, co-owner of Coco Ice. I have been bartending since July 2010. Although I'm new to the cocktail trade, I have managed to learn a lot in a short space of time through intense training, and I am absolutely loving it. My goal is to become a great mixologist and an expert in my chosen spirit.

My spirit of choice is vodka. I have put lots of time into learning about great vodkas and what vodka should offer you as a spirit: how it mixes well to create a great new cocktail, a short drink with a twist offering a new depth of sophistication, or even a smooth sipping vodka. 

Sam

I'm Sam Martin, the Head of Training and Bar Manager at Coco Ice. I have been bartending since 2005 and I joined the Coco Ice team in summer 2010. I trained as a flair bartender with seven-times world flair champion Tom Dyer and have also attended a range of mixology and molecular mixology courses led by the UK's best. I've helped run mixology and flair bars for UK celebrities and was part of the Cocktail Stars team which ran the after-show bar for the 2008 National TV Awards and a flair bar at London's 2009 Bar Show. I've also run training and consultancy across the UK in cocktail mixology and flairing and have designed a great many cocktail menus for bars from London to the north of England. Those who've met me know that I'm passionate about cocktails and will be happy to help you educate your palate with some incredible drinks, both the from the Coco Ice menu and some of my own creation, too! 

I consider myself a rum geek. I have quite a large knowledge of the spirit and I love drinking and learning about it. Come and see me and let me show you the brilliant flavours and tastes it has to offer.

Max

Hi guys, I'm Max, one of the bartenders at Coco Ice. I've been bartending since October 2009, when I started my intense training in the art of mixing. I have come a long way in a short period of time, but I would still say that I am in training as I am constantly learning more and more! I am bursting with enthusiasm for mixology and I have a healthy arsenal of cocktails memorised.

My favourite spirit has to be tequila. Tequila is often considered an unpopular choice of spirit, but if you come and see me at Coco Ice I will be sure to change your mind!

Oli

Hey, I'm Oli. I started my career late 2009, in a small bar in Doncaster. It was here that I started mixology and spirit training. I have had a steep learning curve in recent months as I helped open Coco Ice, where I designed the back bar layout and selected the main spirits we use.

My career is heavily based around mixology and I look forward to continuing my learning and adding some flair to make a great blend of skills. I have a passion for tequila, and using my knowledge of the spirit and my skills in mixology I can show you some great ways to drink it, so come down and try one of my signature cocktails.
